L’Hostellerie Des Monts De Vaux... two centuries of Tradition

Hostellerie des Monts de Vaux - History

Stories have it that the first structure of the hotel building was erected in one night back in 1773, as soon it was announced that a new road would go through the MONTS DE VAUX and not through CHAMOLE. The Revolution broke out, and in the upheaval the cabin became a house, but the road project remained on the drawing board. The Terror gave birth to the Republic which, in spite of its young age and its generous attitude with its budding glory, could not deny General BONAPARTE his new road, as he found that access to the plain was too difficult and too slow for his cannons! Since that time, travelers have kept climbing to the top of the MONTS on foot, on horseback and even on bicycle! In 1950, th Inn became a resort hotel, originally a 1*, then 2*, then a 3* and finally a 4* at the impetus of the CARRION family, which has owned it since 1967 and is serenely looking to the third millennium with the third generation in the kitchen. Two centuries of tradition are found within the walls but also in the kitchen, where the grandson sticks to fresh products and keeps an ear open to the ever-changing wishes of travelers. The Jura has a host of products which the Chef takes pleasure in featuring.

History of Jura

Hostellerie des Monts de Vaux

The JURA, which has been inhabited for 6000 years and incessantly by civilizations and flipped back and forth for centuries between France and Spain, has a tremendously rich past when it comes to originality. The first vestiges of civilization found to date go way back in time to the first traces of dwellings, the lacustrine villages of LAC DE CHALAIN and the cave dwellings of the GROTTE DES PLANCHES. However, it was not until the Romans came with JULIUS CAESAR that the first fruits of urbanization appeared. (JULIUS CAESAR was said to have fought VERCINGETORIX at CHAUX-DES-CROTENAY. The Gallo-Roman villa of TOURMONT, the Temple du mont-rivel in CHAMPAGNOLE, are evidence of close to five centuries of Roman domination.) JURA has retained from past centuries thousands of traces of history reinforced by a few celebrated natives of the Jura Mountains:

  • Marie-François-Xavier BICHAT: Founder of general anatomy
  • Jacques COITTIER: Personal physician of Louis XI
  • Jules GREVY: Président of the Republic
  • Louis PASTEUR: Discovered the rabies vaccine
  • Claude-Joseph ROUGET DE LISLE: Composed “La Marseillaise“
  • Charles SAURIA : Inventor of matches
